Green chickpea pancakes

  • 1 cup (2,4 dl) chickpea flour
  • 1 cup (2,4 dl) water
  • 2 cups (4,8 dl) fresh spinach packed
  • ½ tsp salt
  • ½ tsp cayenne pepper
  • 1 bell pepper sliced
  • 1 tomato sliced
  • 1 avocado
  • 1 can cooked chickpeas
  • a pinch of sea salt


  • Place chickpea flour, water, spinach, salt, and cayenne pepper into a blender. Blend until smooth.
    2. Preheat a non-stick pan on medium heat with some oil.
    3. Add 1/4 of batter and make a thin layer tilting the pan around.
    4. Cook until bubbles have formed on the top, about 2-3 minutes. Flip and cook for 1-2 minutes, or until done.
    5. Repeat until all batter is used. It makes 4 pancakes.
    6. Slice avocado in half, remove peels and pit and place avocado in a bowl and a pinch of sea salt.
    7. Mash avocado with a fork until consistency is smooth with just a few small lumps.
    8. Add avocado, sliced paprika, tomatoes, and a few spoons chickpeas on one side of each pancake and fold it.
    9. Enjoy.
