Green chickpea pancakes, easy, gluten-free, vegan and healthy recipe perfect for lunch or dinner.

New year, new me. Lately (the last few months) I've been eating less healthily. A lot of vegan junk food and copious amounts of vegan mayonnaise.
To change that, and with a new year just around the corner, I'm using new year's resolutions as a reason and a motivation.
So, my new year's resolution this year is to live and eat healthier. More plant-based diet and less oh this is vegan it's okay to eat-diet. Not to lose weight even tho I wouldn't complain if I lost a few kilos. To move more, and be outside more.
However, to achieve that, I'm not waiting for January the first to make all the changes. I'm taking small steps towards my goals, and I'm not striving for perfection. Hopefully, this time I'll achieve them.

I love cooking with chickpea flour. The reason why I love it so much is because it's gluten-free and perfect to use instead of eggs in many recipes. Like in this green chickpea pancakes, or my omelet muffins.
Not only that, but also they are essentially loaded with nutrients and proteins.
RECIPE
Green chickpea pancakes
Ingredients
- 1 cup (2,4 dl) chickpea flour
- 1 cup (2,4 dl) water
- 2 cups (4,8 dl) fresh spinach packed
- ½ tsp salt
- ½ tsp cayenne pepper
- 1 bell pepper sliced
- 1 tomato sliced
- 1 avocado
- 1 can cooked chickpeas
- a pinch of sea salt
Instructions
- Place chickpea flour, water, spinach, salt, and cayenne pepper into a blender. Blend until smooth.2. Preheat a non-stick pan on medium heat with some oil.3. Add ¼ of batter and make a thin layer tilting the pan around.4. Cook until bubbles have formed on the top, about 2-3 minutes. Flip and cook for 1-2 minutes, or until done.5. Repeat until all batter is used. It makes 4 pancakes.6. Slice avocado in half, remove peels and pit and place avocado in a bowl and a pinch of sea salt.7. Mash avocado with a fork until consistency is smooth with just a few small lumps.8. Add avocado, sliced paprika, tomatoes, and a few spoons chickpeas on one side of each pancake and fold it.9. Enjoy.
