Place chickpea flour, water, spinach, salt, and cayenne pepper into a blender. Blend until smooth.2. Preheat a non-stick pan on medium heat with some oil.3. Add ¼ of batter and make a thin layer tilting the pan around.4. Cook until bubbles have formed on the top, about 2-3 minutes. Flip and cook for 1-2 minutes, or until done.5. Repeat until all batter is used. It makes 4 pancakes.6. Slice avocado in half, remove peels and pit and place avocado in a bowl and a pinch of sea salt.7. Mash avocado with a fork until consistency is smooth with just a few small lumps.8. Add avocado, sliced paprika, tomatoes, and a few spoons chickpeas on one side of each pancake and fold it.9. Enjoy.
