Green chickpea pancakes, easy, gluten-free, vegan and healthy recipe perfect for lunch or dinner.
New year, new me. Lately ( last few months) I’ve been eating less healthy. A lot of vegan junk food and copious amounts of vegan mayonnaise.
To change that, and with a new year just around the corner, I’m using new years resolutions as a reason and a motivation.
My new year’s resolution this year is to live and eat healthier. More plant-based diet and less oh this is vegan it’s okay to eat-diet. Not to lose weight even thou I wouldn’t complain if I lost a few kilos. To move more, and be outside more.
I’m not waiting for January the first to make all the changes. I’m taking small steps towards my goals, and I’m not striving for perfection. Hopefully, this time I’ll achieve them.
Have you made any resolutions yet?
